Nordic country cakes are made with almond/marzipan, apple, cardamom, chocolate, cinnamon, lingonberry, rhubarb, and vanilla. They are baked either as smaller tarts, pies, pan, layered, or in the case of Kransekake uniquely formed. They may be plain, glazed, covered with pearl sugar, icing, crumbs, fruit or other decorative toppings. They are always delicious.
