Pearl Sugar are hard granulates of sweet sugar that hold up to baking and are a great topic to use instead of icing. Non Scandinavians may ask if its salt when they see it on bread or buns but once they try it they will appreciate its usefulness. Traditionally it may be used on Pulla or Cardamom Braid or Kannelbullar Cardamom Cinnamom Buns. It is a great replacement for gooey sticky over sweetness of icing that is typical of American buns.
